You will have to create solutions around those assumptions. E.g. Client says they can email but doesn't have reliabe internet or the workload cannot just be done via email.

You may need to adjust to co-workog tools and introduce them to said client. E.g. Trello so you can edit as you go without emailing and still opening the file to make edits.
