Last time I physically hanged out with @tui_hil we watched an episode of Salt Fat Acid Heat and I cried twice. I just understood why. Food doesn't *have* to taste good. I know quite a lot of people who don't care about food at all. But humanity went there. 1/
We found out, even perfected extremely particular and technical ways to cook food just so it's pleasurable.

That to me is the essence of the human spirit, that's the metaphysical Good Stuff™ and that we're still searching, practicing and discovering in that field is holy. 2/
We've found the depth of exctacy in simplicity. We've figured out the funk of fermenting. Spices? Fucking radical!

We express love, we flex, we are frustrated and drawn in by cooking. It permiates, it's express personal truths and even class with "taste" 3/
And damn, if that doesn't remind me of art too. It's that passion to have a simple, survivally speaking non-essential stuff and going hog wild with it that just screams humanity to me at least.

And I love us all for it, even when things seem bleak. That's why I cried.
