Last time I physically hanged out with @tui_hil we watched an episode of Salt Fat Acid Heat and I cried twice. I just understood why. Food doesn& #39;t *have* to taste good. I know quite a lot of people who don& #39;t care about food at all. But humanity went there. 1/
We found out, even perfected extremely particular and technical ways to cook food just so it& #39;s pleasurable.

That to me is the essence of the human spirit, that& #39;s the metaphysical Good Stuff™ and that we& #39;re still searching, practicing and discovering in that field is holy. 2/
We& #39;ve found the depth of exctacy in simplicity. We& #39;ve figured out the funk of fermenting. Spices? Fucking radical!

We express love, we flex, we are frustrated and drawn in by cooking. It permiates, it& #39;s express personal truths and even class with "taste" 3/
And damn, if that doesn& #39;t remind me of art too. It& #39;s that passion to have a simple, survivally speaking non-essential stuff and going hog wild with it that just screams humanity to me at least.

And I love us all for it, even when things seem bleak. That& #39;s why I cried.
