Rice salad with courgettes and sun dried tomatoes, just make with whatever wild rice or nutty rice you can find. You can chuck other things in like broccoli if you need to use them up.

Charred eggplant and walnut pesto pasta salad - we make this once every couple of weeks bc it is so tasty, but drop the cheese and add a handful of whatever greens we have in the fridge e.g. rocket or spinach. Pulled oyster mushroom tacos - big boxes of oyster mushrooms are cheap in TFCs and you can freestyle how you do these. They just need some chillies, spice, sugar and soy to carmelise. This roast courgette and chilli dip is really easy and delicious. Any chilli flakes are fine. muhammara dip is so tasty! This needs pomegranate molasses (which we have bc we make a lot of middle eastern food) but you can buy in TFC. Chilli and lime roasted squash/pumpkin. Can't find a recipe but simply roast a big batch of squash/pumpkin pieces in chill flakes, s&p, spices, lime juice + olive oil. Chickpea and Kale Shakshuka, (we veganise it by dropping the eggs and subbing tofu for the feta), you can sub other fresh greens or frozen spinach for kale and use any bean. Gado Gado, can take a lot of adapting based on what you have eg swapping potatoes for celeriac, adding some protein, swapping green beans for asparagus or broccoli.
