khubiz
-a round leavened Middle Eastern flatbread baked in a tanoor
zlabia
-made by deep-frying flour batter into circular or pretzel shapes which is then covered with sugar syrup
chicken tikka
marinated chicken cubes, skewered & grilled on a direct fire usually eaten with khobz, rice, mixed salad, or grilled vegetables
beef tikka
-marinated beef cubes, skewered & grilled on a direct fire usually eaten with khobz, rice, mixed salad, or grilled vegetables
kleicha
-sometimes considered the national cookie of iraq, it comes in different fillings and shapes. the most popular filling is dates. there are also half moon shaped discs filled with different types of nuts and shredded coconuts.
quzi
considered iraq’s national dish, quzi is slow cooked lamb with roasted nuts, raisins and vermicelli pasta served over rice. the meat tastes heavenly.
masgouf
-one of iraq’s national dishes, masgouf is fish cooked over a stone fire grill and served with white rice

-salad made from toasted or fried pieces of khobiz combined with mixed greens and other vegetables, such as radishes and tomatoes.

-cream filled pastries topped with sugar syrup and pistachio powder
bacha
-boiled sheep head and feet
kahi
-layers of fluffy, flaky pastry soaked in simple syrup and topped with a thick clotted cream called geymar.
dolma
-a dish that consists of meat and stuffed vegetables. usually the vegetables that are used to stuff are tomatoes, peppers, onions, zucchinis, vine leaves, and eggplants. the stuffing consists of rice, thinly cut vegetables, and meat
eggplant salad
-a salad that consists of fried eggplants, tomatoes, onions, and other vegetables, seasoned with pomegranate molasses, usually eat in ramadan.
maqluba
-a dish that consists of meat, rice, and fried vegetables placed in a pot which is flipped upside down when served, which is why it’s named maqluba which translates to upside-down in arabic.
samoon bread
-yeast bread that is baked in traditional stone ovens and sometimes seasoned with sesame seeds. it is mostly used for kebab sandwiches.
leblebi
-a soup made from chicken broth and chickpeas
daheen
-dessert originating from Najaf, where it is usually sold at street markets. It has a fudge-like texture and consists of flour, milk, sugar, clarified butter, and date syrup. Before serving, daheen is traditionally sprinkled with desiccated coconut.
tepsi
-casserole dish consisting of eggplants, which are sliced and fried before placing in a baking dish, accompanied with meat balls, tomatoes, onions and garlic. potato slices are placed on top of the mixture, and the dish is baked
kubba
-the outside is either made of bulgur or potatoes. the inside is made of meat and onions. it is shaped into a ball and then fried.
