in case my food choices help any of you out with using food up in your fridges/just getting up and forcing yourself to cook, i'm gonna start posting them in this thread
tonight's dinner: sauteed kielbasa and cabbage https://www.budgetbytes.com/kielbasa-cabbage-skillet/

cabbage can keep for weeks in the fridge. kielbasa is delicious. mustard is delicious. this also reheats super well for lunch the next day and is easy without being boring.
also, if you're like me and buy red onions for ONE specific purpose that uses like 1/8 of the onion, definitely pickle the rest so it doesn't go bad. these bad boys are delicious on tacos, with eggs, beans, pulled pork, falafel...a lot of shit. https://www.budgetbytes.com/pickled-red-onions/
lots of pantry staples in these recipes, and you can use up ingredients you have as toppings (as long as they're not green olives)
today was falafel. this is the best recipe i've found. surprisingly, using 1 tbsp dried herbs in place of the fresh ones work well. the cinnamon and the use of dried chickpeas is 100% non-negotiable https://www.onceuponachef.com/recipes/falafel.html
because i'm a heathen, i served my falafel with tzaziki (my go-to recipe is linked). diced cucumber and pickled red onions provided some extra crunch and let me pretend that i was eating a full serving of vegetables https://natashaskitchen.com/tzatziki-sauce-recipe/
didn't think i'd like this one but it absolutely SLAPS. always keep a fridge cabbage.

changes: no green onions, no cilantro. added a few drops of fish sauce, ~1 tsp kosher salt, and ~1 tbsp sriracha to the dressing. no whole wheat garbage. https://www.budgetbytes.com/cold-peanut-noodle-salad/
