Tomato-5 medium sized (10 if small Nepali local)-salad tomato does not give that tanginess
Ginger/garlic-1 tblspoon

Cumin powder (1/2 tablespoon), Salt and chili powder (adjust as per your need), add ¼ garam masala if you want it hot
2 tblspoon oil (RC tasted like mustard based, works with soybean, olive and sunflower)
Water approx. 750 ml

Heat oil. While it is getting hot, put the fenugreek seed and wait till it turns dark. Put tomato and salt (half of it at this point) then stir fry it rigorously for 4-5 minutes, then cumin powder, and chili powder (garam masala)

Keep stirring it (do not let it burn)-the heat should be the highest. This is crucial. After 4-5 minutes add HOT water (cold water takes away the aroma).Bring down the heat to lowest. Let it simmer for 10 minutes max or when oil surfaces at the edge.

Add more salt (as we have added half of it in the beginning). Top with corriander if you want (but not recommended as it takes the aroma of the whole thing. Add 1/4 lemon juice if you are using salad tomato #CookAndShare #SanamCooks
correction: ginger garlic should go along with masala
Let me know when it was closed. I remember it having last around 97/98.
Interesting fact: RC and Masangalli both claim that they were the first to open momo shop in Nepal.
