Day 1 sourdough challenge
25g flour
25g warm water
In a clean jar and leave till tomorrow
You can add 1/2 tsp live yogurt if you wish
Day 2
Add 25g flour (wholemeal types of poss)
Add 25g warm water
Mix, cover abs leave for another 24 hours in warm place!
Day 3
Should now be a bit bubbly and sour smelling
Add 25g flour
And 25g warm water
Remember to keep it warm!
Day 4
How’s it looking?
We’re going to make sourdough focaccia on Sunday!!!
For the next two days if your starter is looking good (bubbly, sour and jiggly) feed with 10g flour and 10g water, cover and leave on your counter top
Ok sorry guys, I totally missed doing this on Twitter. Hopefully you have an active starter now, if not discard half and feed again. I’ll explain how to make a sourdough focaccia now
1/ take your starter and weigh it. Add to this equal amounts of flour and water (e.g. if you starter weighs 150g, add 150g flour and 150g warm water). Mix and leave covered in a waem place for 1 hour.
2/ This should now be a bit bubbly. You now take some of this to make a dough, and put 100g back in the fridge as your starter to be used another day. The recipe I am going to give will make a 20cm x 20cm focaccia, but you can double if you want it bigger.
3/ Take 150g and add 220g flour, 130g warm water and mix to a sticky dough in a bowl. Leave for 10mins and then add 4g salt and mix again. Now leave covered in a warm place for 2 hours.
4/ Put a little oil on your hand and then stretch the dough by lifting it from the side and folding into the middle. Turn the bowl and continue this stretch and fold 10 times. Cover and leave in a warm place for 2 hours.
5/ Take your tin and drizzle about 10ml olive oil on the bottom. Gently tip out your dough and then stretch and fold 10 times again. Allow it to relax for 10 mins and then gently tease out to reach the sides. Leave again in a warm place for 1 hour.
6/ press down with your fingers creating dimples, and press in any toppings, cherry tomatoes, olives etc. brush gently with olive oil and allow to rise in a warm place for another 30mins (preheat oven to 200C).
7/ Bake for 30mins. Halfway through remove from the oven and brush with olive oil. Once baked brush again with olive oil and sprinkle with salt!!!! Enjoy!
