Worth noting that I throw a clove of minced garlic and some chopped chives into the brown butter for the mashed potatoes, and I don’t use buttermilk, but sour cream. And a shiiiiitload of butter.
Hello #CookingWithKritter fans. Today: beer cheese, to eat with soft pretzels and chips.
I made it up as follows: a thick pasty roux, then add about half a can of beer, and next, chunks of cheddar cheese, followed by a splash of cream, and a little garlic and cayenne to taste.

I’ve been neglecting to update this, but my cooking has been a bit uninteresting- I don’t think you need my recipes for guacamole and thousand island dressing (hell yes) and stuff... plus I’ve done a lot of off-recipe intuitive shit that I don’t even know how to share with you.

I used real bacon, not vegan substitute, but do as you see fit.
Since you’re frying Brussels sprouts, you might as well fry some potatoes. So these thousand layer duck fat potatoes are labor-intensive and honestly kind of hard to pull off. Cooking story: I like spicy food. So I only had chiles de árbol (instead of Tien Tsin), but I read it was a fine substitute - just not as hot. So I used like 30% more. Trusting this, I decided to eat a whole one clinging to my chicken.

...an entire glass of milk was had.
