It's not just to protect or shield the rock, he routinely breaks tackles. He lowers his pad level to the point where a lot of times, the point of contact is on his arms and he is able to break tackles.
You will see Moss' chiseled arms & off-hand absorb a lot of blows and or redirect that energy into a broken tackle.

I really liked this run by Moss. As he turns the corner the tackler tries grabbing his shoulder and possibly coming over the top with a chop to likely go for the ball. What does he do? Simply rips upwards with his off-hand to break free and cuts it back inside.
