Tonight I'm making coconut chickpea curry! Theoretically. I'm making curry according to a couple random vegan recipes I found online and cobbled together, so, I'm assuming it's not at all authentic. Smells pretty good so far though. #FoodPantryParty
I mostly followed this "Easy Coconut Chickpea Curry" recipe https://yupitsvegan.com/easy-coconut-chickpea-curry/
From the pantry:
- 1 onion
- 1 can coconut milk
- 1 can chickpeas
- brown rice (on the side)
I added:
- 1 can tomatoes
- spices (most of them)
- lemon juice
- chicken bouillon

I added water because I cooked this under pressure in the Instant Pot and you always have to make sure there's enough water to make enough steam. Too much! It came out soupy, but I just turned saute mode on and let it simmer to thicken up while the rice finished.

I also did some more holiday baking recently (using up cranberries, apples, butter, and condensed milk from the pantry!) and that included testing my VERY FIRST EVER PUMPKIN PIE 🥧
I'm glad it came out well, because we have SO much canned pumpkin from the pantry.

Tonight's mac'n'cheese'n'peas* consisted of:
- 2 boxes "Premier Pantry" brand (🤷🏼‍♂️?) mac'n'cheese
- butter
- canned pork
- 1 can green beans
- 1 can mixed veggies
I added:
- shredded cheese
- sriracha

My partner basically ate 2 pounds of pistachios over the course of two weeks and I could not be happier, I wasn't sure WHAT else to do with that many in-shell pistachios #FoodPantryParty
Kitchen sink pot pie?

- russet potatoes
- carrots
- 1 can turkey gravy
- frozen corn
I added:
- celery
- 1 can cream of mushroom soup
- frozen peas
- 1 packet Bisquick (as a crust on top)

The food pantry gave us a jar of Kalamata olives
And when we went to the discount grocery store today they had cheap smoked salmon
So for dinner I am sitting here with just a bowl of two of my favorite foods and I am THRILLED

Oh I forgot, earlier this week we did Instant Pot spaghetti:
- spaghetti
- canned pasta sauce
- frozen ground beef
We added:
- 2 squashy tomatoes
- seasoning

Seems like most people haven't seized on this fact! I'm guessing it's in part bc stores get rid of it (donate it) after the holidays, which is why we have canned cranberry sauce right now...
and also 18 pounds of cranberries in the freezer

Last night I made brownies!
- brownie mix (never gotten this from the pantry before!)

I added:

. @hollygeegosh says this is good, and had seconds. I think it's okay? I'm starting to think I just don't like soup that's not creamy or full of rice.

Instant Pot spaghetti for the billionth time.
- spaghetti
- canned spaghetti sauce
I added:
- ground turkey

- just some straight-up whole tomatoes I threw in because we had them and didn't have enough sauce

Grapefruit! We got whole grapefruit from the pantry last time and I forgot they were in the fridge.

- Sugar in the Raw packets I brought home from work because we had an overflowing bin of sweeteners left over from catered breakfasts

. @beau_manchot is convinced that, among my single-purpose kitchen gadgets, I have like a dozen grapefruit spoons
I would like to announce I have ZERO
and I was really wishing that that was not the case while trying to eat this thing
. @hollygeegosh went to the pantry for us last week, so we've had tons of low-effort food to eat! Not much cooking yet, per se, but I'll share some of the EATING
For breakfast I had butter-flavored instant grits with cut-up tomato, and I added some cheese

In the past week I've eaten three entire avocados, mostly just with salt and a spoon, although I cut one up with more of the food pantry tomatoes with salt and pepper
We also demolished:
a box of hot cross buns
an entire Panera coffeecake
Some A+ soda bread

As usual, the pantry gave us plenty of pasta, so we had our next round of Instant Pot spaghetti this week:
- box of spaghetti
- HUGE jar of sauce
I added:
- ground turkey
- seasoning

That jar was WAY more sauce than the recipe calls for, but @hollygeegosh likes it a little saucier than it usually comes out, so I just added the whole jar, and it was a great choice. Game-changer. Best IP spaghetti we've ever had. #FoodPantryParty
I finished off most of the instant grits, and it turned out there was a bacon-flavored packet in among the butter-flavored...? It was pretty good!
Currently finishing off the last grapefruit. #FoodPantryParty
"African" (the entire continent??) peanut stew:
- 4 small sweet potatoes
- 1 can chickpeas
- 1/2c peanut butter
- 1 onion
- 1 tomato
- 1 can diced tomatoes
We added:
- chicken broth
- spinach
- spices

It is VERY good. I added a lot more salt. Would make again. (WILL make again! we have so many of these ingredients.)

I had some ground turkey to use up, so we did another Instant Pot spaghetti. This time it was only pasta from the food pantry, though, and the rest was stuff we bought to go with it. Fusilli, this time? Endless parade of different pasta shapes around here #FoodPantryParty
Also: some sour cream from the last round of nachos with @beau_manchot
I played fast and loose with the spices (we usually don't have everything that any given recipe calls for). I ended up putting a lot of smoked paprika in. EXCELLENT CHOICE, WOULD RECOMMEND.

Cornbread! Should've thought of this when I first made the chili!

Oh, I'm behind! A couple nights ago I made... I don't know if I can properly call it congee. Rice porridge?

- a piece of salmon jerky because I usually eat it with rice, so why not cook it with the rice?

Last night @hollygeegosh made us a proper dinner:
- baked chicken patties
- mashed potatoes (instant, with butter and a can of evaporated milk)
- canned green beans (with butter)
The only thing not from the food pantry was salt!

So... today is not the best day to be cooking. We don't need more heat in the house. But I had already psyched myself up to cook before we knew the A/C was out, and we need food, and there's ingredients going bad... so...

Side note, I've considered sharing not only how we cook with the food pantry food, but also how much of it goes bad before we can use it... in the interest of transparency, I guess... but that would be depressing just for me, much less for y'all...
