Recipe 1

⚜Ingredients
“Marid man poke”, Chinese seasoning, cube, broad leaf and fine leaf thyme, pepper, coconut milk, rice peas, black pepper, all purpose seasoning

⚜Steps
Soak red peas overnight
Season and pressure the meat and peas
Put aside...
(R1 cont)

Fry up your seasoning (onion, garlic,poke, thyme, pepper etc)
Add peas and meat to put with some Chinese sauce
Add rice
Add coconut milk (liquid should be twice the amount of rice)
Add cube, all purpose and salt to taste
Let it boil down
Traditionally, black eyed peas are used for Old Years Cookup, I was told it's a sign of prosperity.

Some homes will put 2 or so black eyed peas in their purses... prosperity/ money will follow the peas.

#NYECookup will be a mixed peas cook-up though: black-eyed, red, kidney
So I had put the meat to thaw last night. And I soak down the salted meat in hot water this morning. And I went to work.
So I just listen to Karen VN, AFTER I throw in the peas and meat to pressure TOGETHER!

Karen's VN: season d meat and pressure it... when she done pressure the meat to a POOOOINT, she can add d peas mek it blow. Add d peas to the meat AAAFFFFTAH DAH FACKT!
Soooooo, meat and peas pressured. Too much water (but I've had bad experience with too little water) but the meat is good texture and peas not overpressured. We tread on!

So, this is where it gets tricky. Me nuh sure what to do next.

Lemme go see if I can find some ripe plantain and probably a pear to accompany the meal. This is essential.

While I clarify next steps.
Me get the 2 ripe plantains for the side (from a little old lady)

And me still confused about what the next steps are actually supposed to be.

Fry up seasonings, then add everything. Or boil meat, peas and coconut milk and then add seasonings.
So I cooked up the seasonings until onion translucent, then add some of the coconut milk (I reconstituted the milk with excess stock - aka meat and peas water).

Then added meat, peas, rice and mixed together with rest of c/milk.

I add some fresh seasoning atop that. #nyecookup
So I had to mix it up to decrease the likelihood of "bun-bun" (this is inevitable, even with best efforts, I believe); and as the rice was finishing, I put a black bag over it so it could "steam" or whatever.

Also, threw in some pimento seeds.
