Been up all night making red chile for Thanksgiving. Here is how it is done. First you need to clean the chile pods of stems and seeds
Next put chile pods in a pot with water, bring to a boil and simmer for 30 minutes. Smash down the pods with a spoon every 5 minutes so they stay under water
Cut up carne while pods are boiling
When chile pods are done put on blender with hot water and a clove of garlic then blend
Now you have chile caribe.
Except down south where they say chile caribe is green chile but that conversation is for another time.
Put the caribe through a strainer and push down with a spoon to push the chile through. You should be left with peeling and seeds that didn't blend.
Now you have New Mexico gold lol
Next put meat on a pot andcook until no pink is showing. Then drain fat from the meat
Then add your chile and water until you get the consistency you like. Add salt to taste.
Bring to a boil and then simmer for 30 minutes. Stir it occasionally so it won't burn
If you are from New Mexico and make it any other way you might as well just drive to Colorado and pick up some Colorado chile from a Colorado restaurant lol.

Just kidding everyone makes their chile different.
