I don't do 'threads' very much on twitter,but here is one in light of all the stuff going on w.r.t.indian food. We have anywhere between 30-40 different cuisines in india. Based on state,culture,subculture and so on.1/
Quite a significant # of those food items are not even easy to cook overseas since they use local produce and local ingredients. They are not even easy to recreate from state to state in India itself 2/
About 95% of indian food available in restaurants is americanized punjabi food. It is the american version of ONE cuisine out of that many.(even authentic punjabi cuisine tastes quite different than that) 3/
There are a *few* restaurants catering to other cuisines,concentrated in bigger cities where there are more of us folk and almost exclusively having a clientele of indians only 4/
Some examples of such cities are SFO and http://Seattle.My  own kind of cuisine - authentic south indian, vegetarian tamil cuisine is almost impossible to find easily. 5/
I cook my own food way, way better than what most restaurants supply even in India itself. So, if you're looking for 'authentic' indian food - dare to ask an indian friend if they will invite you over to dine at home 6/
If you are open to vegetarian food, i guarantee a great experience (as far as i am concerned), a lot of us others can cook meat really well too. 7/
The next time you see comments on indian food and what is someone's favorite - do remember that you are looking at a miniscule fraction of what is indian food and strongly tainted by commercial interests even there. Thank you for reading. 8/
