Use Tails OS!

Tails OS is a free Linux-based OS that is very private. You can flash the image to a USB stick and plug it in an old pc that is not connected to the internet. It comes with Electrum so you can create a new seed (optional passphrase must be written down and stored safely).
Open Text editor to write the seed words, select them and copy them to clipboard. On top right you have a board called OpenPGP applet. Click that and select "Encrypt Clipboard with passphrase". Use a strong passphrase, write it down on paper and store it securely.
Go back to the text editor and Paste Clipboard contents to get the PGP message. Save this file and copy it to different USB sticks and store them securely in different locations.
You can find more info about the encryption/decryption process on:

This is an easy, safe and secure way to create and backup your Bitcoin wallet. After backing the wallet, go to Electrum and go to Wallet -> Information. Here you will find the Master Public key that derives all your public invoice addresses to deposit coins to.
Write the Master Public key in a text file and put it on a USB stick. Go to an online computer and create a new wallet in Electrum -> Standard wallet -> Use a master key. Now you will have a watch-only wallet that will generate all your addresses to deposit to.
That said. If you do want to interact with your bitcoins, I recommend @COLDCARDwallet !
