We using Chinese brewing method, which is Gongfu tea ceremony(mainly clay teapot). We also uses Gaiwan (porcelain/glass), depending on the tea.
But if you are level 9999 tea master like my tearoom jiejie, you can make any tea with either Gaiwan or Clay tea pot

Usually, when you go to Chinese restaurant, the staff will add hot water to your teapot when you ran out of tea
This is when the flavour of the tea is getting bland and not consistent

Different tea leaves have different limitation, we don't know what are the tea leaves that the restaurant provide.

Depending on the temperature of the water, it will affect the time of brewing.
In Gongfu tea ceremony, you can brew as many as 3-5 times, depending on the quality of the tea leaves
This is why Western style brewing and Gongfu tea style brewing is very different

For Gongfu tea style brewing, 1st brew will take a little longer, to bring out the flavour of the tea. 2nd brew is shorter since the tea leaves already bloomed. 3rd and 4th will take longer time because the tea leaves are loosing flavour, but need consistency

sometimes, even the greatest master tea brew, couldn't do much with low quality tea leaves. They have limitation, hence sometimes these kind of tea can only drink once or twice

And so!! This is why!! When you go to Chinese restaurant, Bak Kut Teh shop, etc etc, you ask staff to add water to your tea, but the flavour always not consistent, because no one care about the quality, temperature and time of brewing

One last note, if you want Chinese tea with less caffeine, go for White Tea!! (Green Tea has caffeine!)

Inspect the teapot properly. If you see dots, it means it has been mixed with different materials. Low quality!
Teapot colour inside and outside must be same, if not, it is just painted. Bad teapot!

Tried another nearby tearoom! This time it's Tie Luo Han, a wuyi oolong tea. And my guess was correct, due to its smokey aroma, it's a rock cliff tea!! #TeaTimeWithKC

开壶, like a baby shower, we nurture the new teapot, so when we brew tea, it won't absorb the flavour of the tea. It might takes more than 100 times of brewing until the teapot no longer absorb the flavour of the tea too much #TeaTimeWithKC

The tea journey I did for two days in KL is actually pretty interesting!! Most of these shops are very old, back to the 70's. You can go to some of the shops and the owner will share tea and chat with you. There's a historical story behind Chinese tea in Malaysia

People who knows how to blend tea are very well respected.
However, a lot of branded companies uses very low quality tea leaves and price their tea very high.

From what I learnt from working as a Barista in Coffee Bean & Tea Leaf
For cold brew, use any jar. Glass? So that you won't get plastic chemicals.
Pour hot water just half into the jar. Put your teabag of choice. Let it sit for an hour

Remove tea bag, then add ice. You can make ice with tea as well, so your tea won't diluted.
For sugar, let's add honey to your liking
