Decided to finally make my own “what vegans eat” food thread.. starting with black bean and sweet potato burgers

First salad from chopt, second is a raw vegan salad with rice noodles, hemp hearts, chickpea salad, hummus, avocado

I miss my grandma’s sunday meals so I decided to make my own. Seitan steak, rice with gravy, cornbread, “pork” and beans, collard greens and mac n cheese

Really don’t know why I waited so long to have buffalo cauliflower...... truly deserves all the hype it gets
To my pizza lovers 
I used the leftover buffalo cauliflower to make this pesto, almond ricotta, cauliflower, spinach and tomato pizza. I truly was winging the ricotta and it came out soooo good, vegan pizzs for the win




Bbq chips
I didn’t realize baking chips would actually present a challenge, but that’s probably why chips are so delicious.

Curry for dinner tonight made with split green peas, chickpeas, onions, potatoes, spinach and carrots

Eggplant ‘parm’. Took me a long time to enjoy eggplant but now I love it breaded in panko and topped with sauce and plant based cheese.
I’m working on a vegan meatball recipe and decided to make a burger out of the mix for my dinner. Its absolutely delicious. And I juiced carrots for this. I honestly couldnt wait to taste it so on the side you can’t see a huge bite is missing.
Yummy veggie bowl with homemade falafel, couscous, mushrooms, roasted red pepper hummus, baked broccoli & green peppers and cucumber-tomato-red onions (marinated in vinegar and salt). Happy belly

Dinner tonight was vegan spinach and mushroom lasagna with cashew ricotta, roasted veggies and cheesy pesto bread

For dinner, I made ravioli with roasted red pepper tomato sauce and a cashew cheese, spinach and tofu filling

Breakfast crunch wrap with spicy potatoes. The crunch wrap has: vegan sausage, black beans, tofu scramble, tostada, 2 types of plant based cheese, lettuce, tomato and avocado 


Sunflower seed cannabis pesto pasta with vegan jalapeño havarti cheese and plantbased prawns (cooked in canna oil and lemon juice)

Stir fry veggies cooked with coconut aminos, thai chili paste, ginger, basil, garlic, aleppo, turmeric and black pepper

Stirfry is: Yellow onion, red pepper, broccoli, mushrooms, bok choy, carrots, green onion and tofu on top of brown rice

For this dish, I made teriyaki sauce & then stir fried Brussels sprouts, carrots, red onions, broccoli, peas, red peppers, spinach, onions, garlic, ginger, tofu scramble and pineapple












This morning I found vegan marshmellows & graham crackers
Then, I medicated agave so I could make strawberry lemonade and just used the leftover decarbed sweet bits to make smores.

Today I am very lazy. Potcorn, potchos, rice mellow fluff & peanut butter with the leftover bits from my infused agave, and big ole glass of my infused strawberry lemonade. Im done.

I made Paella for my first time. Nothing compares to eating Paella in Spain but.... this is pretty good

I was craving a quesadilla last night so I made one today... Vegan buffalo chik’n quesadilla made with daiya mozzarella & cheddar shreds, pico de gallo, refried black beans & morningstar chik’n strips cooked in buffalo sauce with tofutti sour cream and avocado
Perfected my ice cream recipe and made two new flavors in the past 24 hours

I tried to make vegan hamburger buns for my black bean burgers and they did not rise.... but still tasted so good. So I made them in to english muffin breakfast sandwiches

Further exploring and veganizing Japanese cuisine, here is my first attempt at omurice — an example of yōshoku which are dishes that have western influence. An ‘omelette’ on top of tomato fried rice and eggplant
