Let's party with this
I'm going to try to keep this to less popular series than the obvious ones (we all know you should watch S;G, HxH, and Gintama) so hopefully this'll be more interesting...
1. Sayonara Zetsubou Sensei - The classic dark comedy series about a teacher who only sees the worst in everything and his student who only sees the best in everything. Hilariously clever in jokes based on social criticism with quirky SHAFT aesthetics, and some amazing OPs.
2. Paranoia Agent - A psychological/mystery/thriller that explores the causes and consequences of using fantasy and fiction to escape personal and social anxiety If you've enjoyed any of Satoshi Kon's other movies (Perfect Blue, Millennium Actress) you should check this out!
3. Genshiken - Looking for a comedic SOL in a college setting with some grounded/non-cringe otaku based humor? Well look no further than Genshiken, the somewhat dated, but still hilarious, adaptation of the classic manga that follows a college weeb club in their daily antics.
4. Eve no Jikan (Time of Eve) - a Sci-Fi SOL that explores the not so distant future of Japan where androids are an every day part of people's lives and the complex, and sometimes emotional relationships between humans and androids. Not a unique concept but very well executed.
5. Mawaru Penguindrum - A psychological thriller, focused on family centered themes in which 2 brothers try to save their terminally ill sister by finding the mysterious "Penguindrum". Quirky and unconventional, in story telling & visual aesthetic makes this a unique experience.
6. Tamako Market + Love Story - A wholesome KyoAni series/movie that follows the lovable Tamako as she learns about life, love, and mochi from her friends, family, and close-knit community of business owners in the Usagiyama Shopping District. The movie is especially great and QT
7. The Aria Series - My personal favorite SOL and one of the best Iyashikei (comfy) SOLs out there, Aria follows Akari as she works as a gondola riding tour guide as she enjoys daily life in the beautiful, Neo Veniza, a city built on Mars. EVERYONE PLEASE WATCH THIS!
8. Top wo Nerae! Gunbuster - When airings disappoint sometimes you have to go back to the classics in order to get to the top! Check out Gunbuster to see the inspiration behind NGE in this classic 6 EP OVA series about growing up and reaching your potential to save humanity.

10. Classroom Crisis - Back to real hidden gems with this 2015 SOL, Sci-Fi series following an immensely talented group of students working on spaceships and other engineering projects. Has somewhat of a slow start but really ramps up with some interesting politics & plot twists.
11. Kaiba - A quirky Sci-Fi tale where the extremely cartoonish artstyle covers up the inherent darkness of a world in which human memories exist as memory chips & can be transported from body to body, Kaiba explores the societal class system required to make immortality possible
Oh shit time for more anime to add to this...

12. Chihayafuru - The epitome of a show that makes a somewhat boring sounding concept like a poetry card game into an intense hype sports anime that's also a beautiful character drama.
13. Usagi Drop - A heartwarming, comfy SOL of a single dad adopting and raising his grandfather's illegitimate daughter as he experiences both the joy and hardships of parenting.
14. Lu Over the Wall - A ridiculously fun, effervescent story about music, community and friendship in classic Yuasa funky artstyle makes Lu a really fun movie to jam out with.
