Gundo "should" have penalties. He took the last one v Villa, Sterling not on the pitch - but having missed 3 out of 4 pens for Man City (Gundo scored 4 missed 1) I back Gundo for pens

Btw, we would captain Gundogan ahead of Cancelo. Gundo rested, Cancelo played 90, and while we own Cancelo, love him as an asset, 1G 2A all season makes it more risky

Since pod-mate Sam is on Son (c), I'll expand a bit on why I'm on Gundogan (c) despite also owning Son.
Son without Kane means he loses his chief creator. Spurs' assists in 20/21:

I don't think Son plays further forward with Kane out. His average position is the furthest forward already
Counter to this is Son is likely on pens with Kane out. That may compensate for the lesser number of chances - although Kane won't be there to win some of those pens
Brighton have good xGC stats. Across the season, they have the 4th lowest expected goals conceded - but they make mistakes and concede cheap goals, with only 5 cleans this season - while Sanchez coming at GK has helped, Brighton still conceded 3 to goal shy Wolves in GW17
There are arguments to captain many people this week, and Gundogan & Son both have merit. I've gone with Gundo because I believe City have enough sources of chances (despite no KDB) to ensure Gundo returns v Sheff Utd - I don't have the same confidence about Spurs with no Kane
