okay let’s start out with the definition; a gender identity that is not exclusively masculine or feminine. non-binary falls out of the gender binary. can be between or beyond both male and female.
what non-binary is not:

non-binary includes people who are agender, bigender, gender fluid, etc.
non-binary is included in the transgender category because they may not identify with their birth gender
non-binary people can go by they/she they/he they/xe they/she/he etc etc. there’s many many more forms of non-binary pronouns.

oh also! forgot to put that non-binary is an umbrella term for a bunch of other genders!
i would not classify it as a third gender for the fact it is an umbrella term FOR genders
