*What exactly is sex and gender?*
Sex is generally assigned at birth, and is generally male or female and is biologically defined.
Gender, on the other hand, is a social construct. As in, the person may see themselves as a man, woman, something in between or have no gender.

cis gender means a person who identifies with the same sex they were born with.
(Gender preference and sexual identity are two different things)
